🧀 Mini Mac and Cheese Bites
Ingredients (makes about 12 mini bites):

1 cup elbow macaroni

1 tbsp unsalted butter

1 tbsp all-purpose flour

½ cup milk (preferably whole milk)

1 cup shredded cheddar cheese (plus extra for topping)

¼ tsp salt

¼ tsp black pepper

¼ tsp garlic powder (optional)

1 egg, beaten

¼ cup breadcrumbs (for topping, optional)
Instructions:

Preheat oven to 375°F (190°C). Lightly grease a mini muffin tin.

Cook macaroni until just al dente (about 1 minute less than package directions). Drain and set aside.

In a saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1 minute to form a roux.

Slowly whisk in the milk and cook until slightly thickened, about 2–3 minutes.

Stir in cheese, salt, pepper, and garlic powder. Mix until smooth, then remove from heat.

Add the cooked pasta and stir to coat. Let the mixture cool slightly, then stir in the beaten egg (this helps the bites hold together).

Spoon the mac and cheese mixture into the mini muffin cups. Press gently to pack each one.
